HACCP: FOOD CAN BE HELD IN THE DANGER-ZONE FOR 4 HOURS. AFTER THE 4-HOURS TIME LIMIT IS UP, THE FOOD NEEDS TO BE THROWN AWAY. IF FOOD NEEDS TO BE REMOVED FROM THE COOLING FACILITY AND HELD FOR MORE THAN 4-HOURS, HAVE AN ICE MACHINE ON-SITE TO PROVIDE A STEADY SUPPLY OF ICE TO KEEP FOOD ITEMS COLD.
